Worth knowing
The requirement for thiamine is usually calculated not as a fixed figure but in proportion to energy intake — the more calories from carbohydrates, the more vitamin B1 is needed to metabolise them. This is why reference values are sometimes expressed as an amount per megajoule of energy, rather than a fixed daily figure.
Thiamine is sensitive to high temperatures and is water-soluble — prolonged boiling in a large amount of water followed by draining it reduces the vitamin content of the finished dish compared with the raw product.
